Leftover Chocolate Chip Cookies

Leftovers aren’t just for tomorrow’s dinner anymore. Can someone explain to me why most bags of chocolate chips are just slightly more than a recipe calls for? Maybe this is a just me problem. Oh well. I found myself with a few bags of chocolate chips that weren’t enough on their own to make a batch of cookies. Since I made the Double Chocolate Double Chocolate Chip Cookies I’ve decided to always double the amount of chocolate chips. Who knows maybe that will solve my problem going forward, but then I’d have a new problem. Not enough leftover chocolate chips for these cookies.

These cookies are loaded with chocolate chips. Two cups of semi-sweet chocolate chips to start. Follow that up with a quarter cup of mini semi-sweet and a quarter cup of white chocolate and you’ll be in chocolate chip heaven. I wanted to get rid of the last bit of an open bag of brown sugar so that went in. It just so happened to be the perfect amount 1 3/4 cup. Winner! There’s a special ingredient added, again so I could get rid of some leftovers. I had a quarter teaspoon of cinnamon left in a jar. Adding this little bit of something else really put these over the top.

 
 

We had friends over for spaghetti dinner and I brought out these cookies. One of them looked at me and said she’s not really into chocolate chip cookies. She’s more of an oatmeal cookie person. With a little nudge from her friend she tried one. She’s been converted. She’ll never go back. Ok, maybe not, but she loved these cookies and has really changed her mind on chocolate chip cookies. One person down, the rest of the world to go. I want to point out that I love a good oatmeal raisin chocolate chip cookie.

 
 

The tiny bit of cinnamon, in conjunction with the brown sugar give these cookies a unique taste that leaves you wanting more. Loaded with chocolate chips the occasional white chocolate chip hits you with added sweetness. When you make these leave a dozen out to freeze. When frozen they can go from the freezer to the oven. Fresh baked amazing left over cookies at anytime. Win people over to the chocolate chip side with these cookies.

Ingredients

  • 1 Cup unsalted butter (room temp)

  • 1 3/4 Cup dark brown sugar (packed)

  • 2 large eggs (room temp)

  • 2 teaspoons vanilla extract

  • 1/4 teaspoon cinnamon

  • 2 1/2 Cups all purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 2 Cups semi-sweet chocolate chips

  • 1/4 cup semi-sweet mini chocolate chips

  • 1/4 cup white chocolate chips

Instructions

  1. Preheat the oven to 375 degrees

  2. Cream the butter and brown sugar together (2-3 mins) in the bowl of a stand mixer with the paddle attachment

  3. Mix in the eggs

  4. Mix in the vanilla

  5. In a separate bowl combine the flour, cinnamon, salt, and baking soda

  6. Mix the dry ingredients into the wet ingredients in 2 or 3 batches

  7. Add all of the chocolate chips and mix until just combined

  8. Scoop the cookies in 2 Tablespoon scoops onto a baking sheet

  9. Bake for 11-13 minutes in the oven preheated to 375

  10. Cool on the pan for 3 minutes

  11. Move the cookies to a cooling rack to completely cool
