Double Chocolate Cinnamon Doodles (DCCDs)

Last Friday I quit my job. It’s been an amazing confidence boost for me going through this whole process. I’ve grown tremendously in a short time. To celebrate this and some other things I set out to create some cookies. As I started to look through the ingredients and a base for the cookie I completely changed my mind on the direction I wanted to go. These DCCDs didn’t even turn out being what I thought they’d be. I’ll be going back and creating some chocolate snickerdoodles in the near future since these took a left turn. Don’t let that dissuade you from trying these. They’re great. They’re lightly chocolaty with cinnamon flavors and a hint of sweet thanks to the white chocolate morsels. Don’t forget that since we’re using dutch processed cocoa powder in this that we need to use baking powder and not baking soda as our second leavening agent. I also made 8 without the white chocolate chips to see how they’d be as just chocolate snickerdoodles. Nope, not what I was going for.

I think my job was the last major hurdle I needed to overcome to be able to reach my true healed potential. My own self confidence is at an all time high. Throwing these cookies together with no real plan and liking the results has also been a boost. I started out to make a chocolate snickerdoodle just to see how that would turn out. I threw in some extras and said “hey these aren’t what I really wanted, but they’re awesome none-the-less. I’m going to share these too”. My neighbor stopped by the day I was making these and dropped off two cupcakes for The Witch and me to try. I knew she baked, but we haven’t talked in quite some time. It was refreshing. I told her I was making cookies and would drop them off later. I can feel something good blossuming. She used to make wedding cakes for a living so I’ve got some stuff to learn. Her husband was excited for the cookies so I think we’re probably going to be swapping goods for a while. If not that’s fine, I can still have someone to pawn off extras too. I can’t stay in climbing shape eating batch after batch of cookies all the time.

Ingredients

  • 2 1/2 Cups All Purpose Flour

  • 1/4 Cup dutch processed cocoa powder

  • 2 teaspoons of cream of tartar

  • 1 teaspoon of cinnamon

  • 1 teaspoon of ground espresso (espresso or fresh press grind)

  • 1/2 teaspoon of salt

  • 1 teaspoon of baking powder

  • 1 Cup (2 sticks) unsalted butter

  • 1 Cup granulated sugar

  • 2 large eggs

  • 2 teaspoon of vanilla

  • 1 Cup White Chocolate Chips

Instructions

  1. Pre-heat the oven to 400 degrees.

  2. In a medium sized mixing bowl combine the AP Flour, dutch processed cocoa powder, cream of tartar, cinnamon, espresso, salt, and baking powder

  3. Cream the unsalted butter and granulated sugar in the bowl of your stand mixer using the paddle attachment. This should take 2-3 minutes. You should notice that it turns a pale yellow

  4. Add the eggs one at a time only when the previous one is fully incorporated

  5. Add in the vanilla

  6. Slowly combine the dry ingredients into the wet, in batches, until just mixed

  7. Add the white chocolate chips and mix on low for 20 seconds

  8. Scoop out cookies in 3 Tablespoon mounds. Bake for 10 minutes

  9. Let the cookies cool on the pan for two minutes and then move to a cooling rack

  10. Enjoy
