Coconut Chocolate Chunk Blondies
We’ve been binge watching Criminal Minds. It was something The Witch was doing when I we first started talking. That doesn’t have a whole lot to do with these blondies we just happen to be watching it right now. Back to the blondies. I can’t get enough of blondies. When I was younger my mom and I would go to Applebees. They had an amazing maple walnut blondie that was served hot with a scoop of melting vanilla ice cream on top. I’ve been chasing that thing for a long time. Face it Applebees isn’t that good. Maybe what I should do is try to make that.. hmmmmm. Another post for another time.
These blondies are just as chewy and awesome as always. It’s still the base blondie as I’ve been making for a while. This one has coconut extract and sweetened coconut in it to drive that yummy flavor. Round it out with chocolate chips and you’ve got a sweet chocolatey coconut gooey snack. Hot from the oven and a cold melting scoop of ice cream and you’re in heaven. The shiny crackly top is so light. They melt in your mouth.
I can’t say enough about these. The only way to experience them is to scroll down, view the recipe, and then make them yourselves. It’s totally worth a trip to the store for any ingredients you might be missing.
Ingredients
Blondies:
1 Cup Unsalted Butter (2 sticks)
2 Cups Dark Brown Sugar (packed)
2 large eggs
2 teaspoons of vanilla
1 teaspoon of coconut extract
2 Cups All Purpose Flour
1 teaspoon of salt
1 teaspoon of baking powder
1 1/2 cup of chocolate chips
1 1/2 cups of sweetened flaked coconut
Instructions
Preheat the oven to 350 Degrees
Line a 9x13 inch baking pan with parchment letting a few inches hang over the sides (spray with cooking spray before you add the batter)
Melt the butter
Add the melted butter and the brown sugar to a bowl and whisk together until the brown sugar disolves
Whisk in the eggs one at a time
Add in the vanilla and coconut extract
In a separate bowl combine the flour, salt, and baking powder
Slow fold in the dried ingredients to the wet, scraping down the sides of the bowl as needed
Fold in the chocolate chips and coconut
Pour the batter into the parchment lined baking pan. Make sure you spray the parchment with cooking spray right before this
Smooth the top of the batter
Bake for 35 - 40 minutes or until a toothpick comes out clean
Let rest in the pan for 10 minutes
Using the parchment as handles lift out the blondies and let cool on a wire rack
