Here we are, still locked down, with nothing open. That’s a bit of an overstatement here in VA, but most things are still closed. I’ve been working from home for five and a half weeks. I’m currently on a conference call, the fourth one on this issue in two days. I’m not bringing much of value which is why I’m doing this instead. I was able to show my value yesterday by showing the core issue being packets being dropped to bring up a vpn tunnel which then leads to time outs. Now we’re just discussing fixes both short and long term.

Tickets are still coming in, things are still being sold, and clients still have needs. There’s no rest for the week. I need a week’s rest desperately.

Anyway, on to the cookies. The S’mores brownies were a hit and I’ve been wanting to make some oatmeal cookies. I figured why not make them s’mores like. I have left over stuff from the brownies so might as well use them up. I wanted to play around a bit so I made a half batch and I think they’re great. Feedback has been good. Unlike the brownies the marshmallows are in the cookies when baked. They melt but provide a gooey sweet treat. There isn’t much of a charred flavor since I don’t char any marshmallows on the top. That aside they’re still great. I would consider adding a tablespoon of water for a full batch, maybe even two, because when you crush the graham crackers and add them in they really soak up any left over oatmeal. This doesn’t impact flavor or moisture content, but it could help them last time wise. This batch didn’t last long enough for me to know if that’s really an issue or not. Two days later they were still very moist as I stored them in a bag. There’s a sneaky little trick where you can add a single slice of bread in your storage container and that will keep them moist longer or add any missing moisture.

I’m still on this call and I haven’t said anything yet 36 minutes into it. They’re arguing about change requests and time lines, none of which is in my control. I guess I’ll go back and try and pay some attention just in case someone needs something from me. Make these, try them out, and let me know what you think. I hope you like them.

Ingredients

Cookies:

  • 1 Cup Unsalted Butter (2 sticks) room temp

  • 1 Cup packed Dark brown sugar

  • 1/2 Cup granulated sugar

  • 2 large eggs

  • 1 teaspoon of cinnamon

  • 1 teaspoon of vanilla

  • 1 1/2 teaspoons of baking soda

  • 1 1/4 Cup of old fashioned rolled oats

  • 1 teaspoon of salt

  • 1/2 teaspoon of baking powder

  • 1 teaspoon of Dutch processed cocoa powder

  • 1 1/2 Cup of All Purpose Flour

  • 6 graham cracker sheets

  • 1 Cup mini marshmallows

  • 1 Cup dark chocolate chunks

Instructions

Cookies:

  1. Preheat the oven to 350 Degrees

  2. Cream, with the paddle attachment, the butter and sugars together

  3. Mix in the eggs one at a time, adding the second once the first is completely incorporated

  4. Mix in the vanilla

  5. In a separate bowl combine the flour, cinnamon, dutch proceed cocoa powder, baking soda, baking powder, and salt

  6. Slowly add the dry ingredients to the wet and mix until incorporated

  7. Crush up the graham crackers into chunks and fold in

  8. Add a tablespoon of water if it appears too dry

  9. Fold in the marshmallows and chocolate chunks

  10. Scoop the dough in 1 1/2 Tablespoon size chunks onto a cookie sheet

  11. Bake at 350 for 12-15 minutes

  12. Remove from the oven and let sit on the pan for 2-3 minutes

  13. Complete cooling on a wire rack
