Great Aunt Sue's Triple Chocolate Oatmeal Raisin Cookies
As part of this blog I’ve kept a running list of the things I want to make as the ideas come to me. For a while now I’ve wanted to make a chocolate oatmeal raisin cookie just to see how they’d taste. We were walking through the grocery store when dark chocolate covered raisins caught my eye and I knew what had to be done. I grabbed them and put them in the cart. Normally I’m one for dark chocolate everything, but with dark chocolate covered raisins, and dutch processed cocoa I decided to go with a semi-sweet chocolate chip to help counter balance some of the “bitterness” brought by the other chocolates.
As I prepared to make these I got a text from my mom letting me know my Great Aunt Sue had passed away. If you know me I’m not very good with family (my grandma told me family was everything when I was 16 and I chose to disagree with her. I didn’t and couldn’t understand how wrong I was). Great Aunt Sue was in her nineties. The last family reunion I went to she knew exactly who I was without having to ask anyone. I can’t tell you the last time I had seen her. It’d probably been close to 15 years. I was shocked and pretty happy she remembered me. She was always so kind to me. I was kind of bummed that she had passed so I made the effort to reach out to her “children” and send my condolences. They were genuinely grateful to hear from me which felt good. Since that family reunion I’ve tried to be more connected to my extended family. It’s really all on me that there was and has been continued distance. Working through my feelings towards family has been something I’ve really been working on. I was making a point here and that is that I’m going to be dedicating these cookies to her memory. I have no idea if she liked chocolate, or raisins, or even oatmeal cookies. This is just the only thing I really know how to do to honor her.
Now that you know that much more about me let’s talk about these cookies. They are on point. They hit all of the chocolaty notes. Their moist and chewy with just the right texture for an oatmeal cookie. You’ll notice there isn’t any cinnamon in these. I always find it a bit weird, probably just me, working with cocoa powder and cinnamon together. I can’t put my finger on it there’s just something that doesn’t work for me. You won’t miss the cinnamon anyway. If you like oatmeal raisin cookies, or oatmeal chocolate chip cookies, then whip up a batch of these, pop them in the oven, and text those you love while you wait for the cookies to bake.
Ingredients
Cookies:
1 Cup Unsalted Butter (2 sticks)
1 1/2 Cup Dark Brown Sugar
2 large eggs
2 teaspoon of vanilla
1 1/4 Cups All Purpose Flour
1 teaspoon of salt
1 1/2 teaspoon of baking powder
1/4 Cup Dutch processed cocoa powder
3 Cups Old Fashioned Oats
1 cup semi-sweet chocolate chips
1 cup dark chocolate covered raisins
Instructions
Preheat the oven to 375 degrees
Line a baking pan with parchment paper
Cream the butter and brown sugar in the bowl of your stand mixer using the paddle attachment
Add the eggs, one at a time, to the creamed butter and sugar and mix
Mix in the vanilla extract
In a separate bowl combine the flour, salt, cocoa powder, and baking powder, whisk together for best results
Slowly mix in the dried ingredients to the wet, scraping down the sides of the bowl as needed. Do this in at least 2 batches.
Add in the oats and mix until incorporated
Mix in the semi-sweet chocolate chips and chocolate covered raisins until just combined. Do not over mix. This should only take 10-15 seconds
Scoop the dough in 2 Tablespoon portions onto the parchment lined baking pan
Bake the cookies for 11-12 minutes and remove from oven.
Let them cool on the pan for 3 minutes before removing to a wire rack to cool completely
